When I read that Sisi’s skin condition could be linked to a gluten sensitivity I got worried. It seems like gluten is every where and no matter what it’s insanely hard, and expensive to avoid it.
So when I found out that Cocoa Pebbles (and also Fruity Pebbles) are Gluten-free, I was pretty thrilled.
This is a cereal that Sisi already likes, and isn’t something strange and overly expensive that I can only buy at a few stores in town or strictly online.
Disclaimer: I was sent a box of cocoa pebbles to use for a recipe, that the kids didn’t like the idea of in the slightest. So I do need to disclose I was sent some product.
The website for Cocoa (and fruity) Pebbles offers some recipes you can make, not all of them are gluten-free, but can easily be made that way. We were sent along a recipe for a rice pudding using using the cereal that I was willing to try until the kids were like “that sounds so bad… can we just eat the cereal?” Leading me to just let them have it and figure out what I was going to do as far as trying out that kind of thing went.
In the end I went and made a smaller batch of the recipe myself, and then completely forgot to take any pictures. I liked the Cafe and Cocoa Pebbles Rice Pudding. I’ve never had a rice pudding mind you, and I have texture issues. So I wasn’t even sure how I would manage it but I wanted to try something new! In the end the texture almost reminded me of how I like to put sticky rice in my egg-drop soap and let it soak up all the broth before I eat it.
Thank goodness I am used to a texture like this then, and I am glad I tried it. I think next time around I will add some instant coffee as a sprinkle for the top instead of the cinnamon. Cinnamon is one of those things I only really seem to enjoy in smaller doses and only at certain times.
You can find the Cafe and Cocoa Pebbles Rice Pudding recipe on their website. Or you can just click it’s title in the previous sentence.
I ended up making about 1/4 of what is called for with this recipe, as it makes 12 servings and the only one who wanted to try it was me. I didn’t ever imagine that I would like rice pudding, but with the instant coffee and the cereal, I have to say that I was pretty pleased.
Of course there are other ways to enjoy both flavors of Pebbles cereal that are gluten free and still delicious, even if your kids decide that rice pudding sounds horrible like mine did. Maybe when they’re all a bit older I can convince them to at least try it?
Have you ever tried a rice pudding before? What about one that uses a rice cereal like this?
